Black Cherry Syrup - Black Honey
A natural Ethiopian in all its glory. Intensely syrupy and sweet on black cherry with floral notes of dark honey. From the Sidama region, this coffee definitely makes you travel to Ethiopia.
In espresso for a cup that highlights intense cherry notes or in filter coffee to obtain the more delicate notes of dark honey.
De facto leader and organizer of a collective of small independent farmer-exporters around Bensa, Bekele Balacho has 11 children with his two wives. He runs his farms and drying stations with the help of his family. His son, Beleteno, who graduated this year with a degree in economics from Hawassa University, runs his farm Hora Ganet (meaning “Paradise of Spring”). Between his farm in Bombe and a smaller 5-hectare farm in Kokose (with its own drying station), Bekele buys cherries from more than 100 smallholders, producing a total of 1.5 containers of coffee.
Like many collectors in Ethiopia, his bottleneck, with cherry prices as high as they are, is financing. Bekele is a connector and a consummate professional, an ideal partner, willing to engage with any ideas to improve his coffee and help his community.
Recently, Bekele expanded his shaded drying area to cover almost his entire station, protecting the natural, traditional, anaerobic and lactic coffees he produces there, and checking their final moisture content using a moisture meter.
