Aroma and flavor :
Black cherry syrup - Black honey
A natural Ethiopian in all its splendor. Intensely syrupy and sweet on black cherry with floral notes of dark honey. Coming from the Sidama region, this coffee will undoubtedly make you travel to Ethiopia.
As an espresso for a cup that highlights notes of intense cherry or as a filter coffee to obtain the more delicate notes of black honey.
De facto leader and organizer of a collective of small independent farmers-exporters around Bensa, Bekele Balacho has 11 children with his two wives. He operates his farms and drying stations with the help of his family. His son, Beleteno, who graduated this year with an economics degree from Hawassa University, manages his Hora Ganet (meaning “Spring Paradise”) farm. Between his farm in Bombe and a smaller 5-hectare farm in Kokose (with its own drying station), Bekele buys cherries from more than 100 smallholders, producing a total of 1.5 containers of coffee.
Like many collectors in Ethiopia, his bottleneck, with cherry prices as high as they are, is financing. Bekele is a consummate connector and professional, an ideal partner, ready to engage in any ideas to improve his café and help his community.
Recently, Bekele expanded its shaded drying area to cover almost the entirety of its station, thus protecting the natural, traditional, anaerobic and lactic process coffees it produces there, and checking their humidity levels final using a humidity meter.
